Raspberry Cream Cheese Pie

On a recent trip to Portland to visit Alice, we picked raspberries at a berry farm with her daughter Alicia (Dart). Later that day, we had dinner at Alicia’s and she had made this pie with some of her berries.

Graham Cracker Crust
1 pint raspberries, strawberries or sliced peaches

Glaze:
1 cup water
1 cup sugar
2 Tablespoons cornstarch

Heat – stirring constantly until mixture starts to thicken.  Take off
stove and add 1/4 cup raspberry jello (or use 1 cup crushed berries in place of the jello)
Stir and let cool.

4 Tbl. of cream cheese
4 Tbl. of sour cream

Mix and spread on bottom of pie shell Then add 1/2 the berries and 1/2 the glaze.  Repeat. Pile the berries as high as you would like, the more the better.
