When Robin was in high school, she worked at Lisa Steig’s home preschool and they made this recipe with the children. Use an apple peeler-corer-slicer for quick preparation.
1 C flour
1 C rolled oats (not quick oats)
1 C firmly packed brown sugar
½ C butter
4 C sliced apples
1 C sugar
¼ C flour
½ t. cinnamon
Mix first four ingredients till crumbly for topping. Set aside. Mix apples, flour, cinnamon and sugar. Place in 8” baking dish. Top with crumb toping. Microwave on high for 15 minutes. Cool and serve with whipped or ice cream.
