Beer Batter

Roland’s sister, Louise, taught me you don’t have to like beer to love it in this recipe. It makes the best breading for deep frying fish or onion rings.

1 C flour
1 egg
½ C milk
salt & pepper
Beer

In blender, mix first four ingredients and add enough beer to make a thin batter. Dip fish in batter, then in a mixture of:
Cracker crumbs
Corn meal

Deep fry in oil.
