Starlight Double Delight Cake

Here’s the best homemade chocolate cake ever (although it’s a lot of work!) It’s from the same Pillsbury Bake-Off recipe book that the Silky Chocolate Pie is in. This one won overall grand prize that year (1952). It has a dense even crumb, is moist and rich, with a hint of mint. Mmmmm…

Chocolate Frosting
2 pkgs cream cheese
½ C shortening
½ tsp vanilla
½ tsp mint flavoring
6 C sifted powdered sugar
¼ C hot water
4 sq melted baking chocolate. Mix until smooth.
Cream the cheese and shortening. Add vanilla and mint flavoring. Add half the powdered sugar, then the hot water, then the rest of the powdered sugar. Blend in melted chocolate. Mix until smooth.

Cake
¼ C shortening
2 C frosting mixture
3 eggs
2 ¼ C sifted flour
1 ½ tsp soda
1 tsp salt
¾ C milk

Combine shortening and 2 C frosting mixture. Beat in eggs, one at a time. Combine dry ingredients and add to creamed mixture a little at a time alternately with milk. Blend thoroughly until it’s smooth. Pour into two well greased and floured 9” round cake pans. Bake 30-40 minutes at 350°. Remove from pans and cool. Frost with remaining frosting.
