Alice found this simple meal and emailed me the recipe. Prep time is about 5 minutes, and there is no cleanup at all except throwing everything in the garbage can.
I shared it with a friend at work, and she said she then started making several types of meals in foil packets. So good, quick & easy!
4 chicken breasts
Salt & pepper
1 C salsa
1 can black beans, drained and rinsed
1 can corn, drained
Sour cream
Shredded cheese
Cooked rice
Tear of 12”x12” piece of heavy duty foil for each chicken breast. Spray center of foil with Pam. Place chicken breast in middle of each foil piece. Salt and pepper to taste. Put ¼ C salsa on top of each chicken breast. Divide beans and corn evenly on top of each chicken breast. Bring edges of foil together and seal rightly to make a packet. Place on baking sheet and bake at 450° for 20-25 minutes. Serve over rice; add grated cheese and dollop of sour cream.
