This is Bunnie Colwell’s Coconut Cream Pie recipe. You can also use it for banana pie, by leaving out the coconut and layering it with sliced bananas. It’s a rich, delicious pudding for cream pie; better than Marie Callendar’s !
9” baked pie shell
2/3 C sugar
¼ C cornstarch
½ tsp salt
3 C milk
4 egg yolks, slightly beaten
2 T butter
2 tsp vanilla
¾ C coconut
In saucepan, blend sugar, cornstarch and salt. Stir milk into yolks. Stir egg mixture slowly into dry ingredients. Cook, stirring constantly, over medium heat until thick and boiling. Boil and stir one minute. Remove from heat. Blend in butter, vanilla and coconut. Pour into pie shell. Chill. Top with real whipped cream.
