I found this recipe in a magazine when the kids were little. They’re delicious and a nice variation from banana bread.
3 C flour
1/3 C sugar
4 t. baking powder
1 t. cinnamon
¾ t/ baking soda
½ t. salt
1 ½ C applesauce
6 T butter, melted
½ C milk
1 egg
¾ C chopped nuts, if desired
Preheat oven to 400°. Grease muffin pan.
In large bowl, mix first 6 ingredients. In medium bowl beat applesauce, melted butter, milk and egg with fork until blended; stir in flour mixture just until moistened. With spoon, stir in nuts.
Spoon batter into muffin pan cups. Bake 20-25 minutes for large muffins until toothpick inserted in center comes out clean (15 minutes for small muffins). Immediately remove from pans. Serve warm. Makes 12 large or 24 small muffins.
