Alice found this simple meal and emailed me the recipe. Prep time is about 5 minutes, and there is no cleanup at all except throwing everything in the garbage can.
I shared it with a friend at work, and she said she then started making several types of meals in foil packets. So good, quick & easy!
4 chicken breasts
Salt & pepper
1 C salsa
1 can black beans, drained and rinsed
1 can corn, drained
Sour cream
Shredded cheese
Cooked rice
Tear of 12â€x12†piece of heavy duty foil for each chicken breast. Spray center of foil with Pam. Place chicken breast in middle of each foil piece. Salt and pepper to taste. Put ¼ C salsa on top of each chicken breast. Divide beans and corn evenly on top of each chicken breast. Bring edges of foil together and seal rightly to make a packet. Place on baking sheet and bake at 450° for 20-25 minutes. Serve over rice; add grated cheese and dollop of sour cream.
